Muesli

So I fancied something different for breakfast this week and I remembered this lovely little recipe from the Nuffield Food group. It makes for such a simple nutritious breakfast and you can experiment with different combinations, like substituting the apple for pear, or various different nuts & dried fruits.. Apples are rich source of  antioxidants and phytochemicals, whilst the nuts and seeds are a great source of protein and healthy fats and a whole host of vitamins & minerals.. What better way to start your day… It is a great option for anyone opting for a more plant based diet, or anyone looking for a gluten free breakfast choice.

Ingredients

1 apple, cored & quartered
Handful of almonds (or other nuts)
Handful of cashews (or other nuts)
Handful of pumpkin seeds
Handful of sunflower seeds
Handful of desiccated coconut
Handful of dried fruit of choice (dates/ prunes/ dried apricots)
1/4 tsp vanilla extract
1/4 tsp cinammon

Method

Place the apple in a food processor, and add the remaining ingredients in the order listed

Pulse quickly until desired consistency. Be careful not to over blend
