Sweet potato & chickpea burger

So, here’s another old favourite of mine. We tried out the concept of a healthy food market at the Nuffield in the early days, and these did sell well. They make an easy weekday tea, and are pretty simple to do. I’d always recommend making extra portions and popping them in the freezer for busy days. Always a dream for busy mums! Chickpeas are a great source of fibre and protein, and sweet potatoes are a brilliant source of delicious nutrition. They are up there as one of my favourite foods. They are a great source of beta carotene, which is a brilliant  antioxidant, with many health benefits including healthy skin.

Ingredients

1 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, finely chopped
1 small chilli finely chopped
1 small sweet potato baked in skin, cooled & peeled (approx 150g cooked)
400g can chickpeas, drained
50g (2oz) gluten free breadcrumbs
1 tsp ground cumin
Juice of 1 lemon
2 tbsps fresh coriander chopped
Salt & pepper to taste

Method

Cook the onion, garlic & chilli gently in the olive oil until soft.

Mash the beans with the sweet potato & stir in the cumin, lemon, coriander & breadcrumbs

Add the onion mixture & stir well together

Season to taste & shape into four burgers

Grill or bake until cooked & golden & enjoy!
